Restaurant-Style Smashed Potatoes: A Quick Dish Loaded With Flavor

When my son graduated last year from high school, I told him that I was going to do all of the cooking for his graduation party. He could have cared less. My husband thought I was nuts. I knew we were just going to keep it small. Close family and friends. Maybe thirty people. I told him big party, little money. Little party, big money. He went for the money. He needed a new laptop to take to school with him. So, I figured we would have maybe twenty-five to thirty people there.

That’s not too crazy to cook for. It’s a lot, but it certainly isn’t impossible to do.

I figured we would do meatballs and ham. Simple and affordable. Everyone likes those things too as far as I’m concerned. Then, I asked him if he wanted a baked mac and cheese or mashed potatoes. “Mashed potatoes, Mom. But I want the really good ones.” Oh boy… no pressure. I wasn’t quite sure what he meant. I figured the kind we got when we went out to eat.

I searched restaurant-style potatoes and found these on The Pioneer Woman. Yup. That’s exactly what he was looking for I bet. I made a great big kettle full. Tripled this recipe I think. They were so delicious. There wasn’t a drop left in the pan.
