There is something so amazing about fresh caught fish on your table that makes eating even that much better. When I was a kid, my uncle owned a second property in The Keys (Florida). There he had a two-story home that was basically a beach house. The yard was not grass, it was grass that led into the ocean. I mean, he had his own private beach! He had a large deck where they would keep jet skis and boats.
And at the very end of the pier, we would fish every single night. They were usually little fish we did nothing with but throw them back, but it was so much fun. One day, we went out deep sea fishing.
We were looking to catch dinner that night. We did not want to abuse and it is illegal to keep everything you fish, so we only kept some things. We caught many lobster and fish, but the one thing we really wanted (salmon) we could not find.
So, we went to a grocery store, picked up a packaged kind and made it. We seasoned it perfectly and then added a brown sugar/honey crust that made it absolutely amazing.
