You Too Can Make These Crispy Potato Chips – It’s Easier Than You Think!

We go through potato chips like crazy! But one thing we always have on hand is potatoes.  I have tried my hand at making potato wedges, and while they always turn out delicious, sometimes they take too long to make on a quick sandwich night.  That is when this recipe comes in.  Microwave potato chips!

I mean, what?! This is such a simple recipe, you will be floored at how amazing they turn out.  You barely have to do any work, yet what you get is some amazing deliciousness! Don’t let these pass you by! Next time you’re out of chips, you may remember this!

Check out what our friends over at Eclectic Momsense had to say about these:

“You don’t need a deep fryer to get crispy potato chips.  We made these chips right in the microwave!”

ohh yes, I now know this trick and will never have to make a Farm Store run again!

Ingredients

potatoes

Bertolli olive oil

salt

pepper

ice water

Instructions

Thinly slice your potatoes using a mandolin. Slices should be between ⅛-1/16 inch thick.

Immediately place slices in ice water. This helps to remove the starch and create crispy chips with those delicious air pockets.

Dry the slices using a salad spinner or clean dish towel.

Line a plate with parchment paper. Lay the potato slices out so they aren’t touching. Spritz with a little olive oil, then sprinkle with salt and pepper.

Microwave on high for 3 minutes each side.

Transfer chips to a bowl, then repeat with the remaining slices.
