Classic Peanut Butter And Jelly Sandwich Turns Into A Cupcake!

What was your favorite snack as a kid? A snack that you couldn’t say no to even if you always ate it. In my case, it’s a peanut butter and jelly sandwich. I know, I know. It’s quite ordinary. But that’s exactly the reason why I love it even up to now. With so many reinventions of classic dishes such as desserts, it always feels nice to be able to come back to something basic yet a classic favorite. For me, that title belongs to peanut butter and jelly sandwiches.

When I was a kid, I usually ate peanut butter and jelly in the morning. I had a small stomach back then and Mom baked the largest breads. One sandwich was always enough for me to last until lunch in school.

Lunch was either tuna or chicken sandwich with lettuce and tomatoes or another peanut butter and jelly sandwich. I couldn’t get enough of it! I could eat another one when I arrived home just before dinner.

My husband finds it amusing that whenever I prepare peanut butter and jelly sandwich for our kids, I always make one for myself. He doesn’t tease me about it though. He has his own quirks that are like mine.
