A Favorite Italian Appetizer Transformed into a Weeknight Meal

Ever heard of Arancini? Commonly known as Italian rice balls, this delicious appetizer filled with rice, meat, and peas doesn’t have to be a precursor to the main dish. Convert it into a casserole and move it to the forefront.

Seconds are a must, and leftovers freeze well! You have the option of using lighter ingredients, such as lean turkey as shown in this recipe, or swap them out for full fat versions, such as beef.

The filling is ground turkey with a little sausage that adds lots of flavor, plus peas and sauce. If you don’t like peas, swap it with another vegetable. I’m thinking of trying a broccoli and sausage version next.
