I never understood the appeal of meatloaf when I was younger. What’s so good about eating a great big chunk of meat? Whenever Mom would make it, I would usually take the smallest piece she would let me get away with. I would rather fill up on mashed potatoes and vegetables than meat. When I got older, I slowly started to understand why we used to have it so much. For one thing, it was actually pretty good. I started to like meat more and more the older I got.
Especially red meat. Yum! Not only that, the price for something like this is right when you are dinning on a budget. It makes a nice sized loaf that can serve several people easily.
This classic recipe that I found on Recipe Lion is the one that I usually make. It’s very simple, and tastes delicious. Even my kids like this meatloaf and much like their mother, they aren’t too fond of big servings of meat. I just cut it up smaller so it looks more like meatballs. They don’t know the difference.
