Southern Overnight Breakfast Casserole

My parents, and grandparents especially, grew up when life was simple. Now, everything seems to be so technological and advanced. I enjoy having the freedoms and assistance that we have with all the advancements, but I also would like to know more about what is was like when things were easier. I feel it would have been a lot less stressful. You wouldn’t always be trying to learn something new or keep up with the latest gizmos and gadgets. You just live life how it is.

Part of that simple life included simple meals. That’s one thing that I was lucky to get passed down to me. When my grandma or Mom were in the kitchen, I was helping and paying attention. That was one of my favorite places to be when I was little. It was still laid back and relaxed in that room.

Southern breakfast casseroles like this one from Louisiana Bride Blog are one of the meals we use to make at night before going to bed. It was an nice evening activity, and an even nicer morning meal. Even all these years later… it still tastes amazing!
