I’m pretty old school. I like the traditional recipes that my mom used to make for us. Roast, mashed potatoes, spaghetti, goulash, and of course meatloaf. Her recipe for meatloaf was super tasty, and I used it for years after I first got married. My husband never really seemed overly impressed with it. I didn’t understand why. I loved the stuff. It’s what I grew up on though so I guess it was just one of those things. He probably loved his mom’s meatloaf as much as I loved mine.
There was one thing that I knew for sure. He loved bacon. I contemplated how I could possibly sneak some bacon into my meatloaf and still make it good. That’s when I came across this recipe on Group Recipes for cheesy bacon meatloaf. Well alrighty then. It was like someone heard my question and had the answer.
Whenever I make this, he is always the first one at the table now. He wants to make sure that he’s getting a great big slab of this before it disappears. It’s so tasty, even my overly picky son eats this without making any comments about how he doesn’t like it. That means it’s a good one for sure!
