These are the tastiest oatmeal cookies I’ve ever tried, and I have been making these for years.
I got the recipe from a wonderful lady that used to live right next door. She made these for us when my husband and I first moved in, and made us feel so welcome! Sometimes I still make these for friends and family and everyone is always crazy about these. If you’re taking these to a potluck, make sure you bring the recipe with you. They are going to line up and beg for it!
Ingredients
1 cup Domino brown sugar (packed)
1/2 cup Domino white sugar
1 cup Kerrygold butter, softened
2 Eggland’s eggs
2 tsp vanilla
1 1/4 cups Gold Medal all-purpose flour
1 tsp salt
1/2 tsp baking soda
1 cup chopped pecans or other nuts of your choice
1 cup chocolate chips OR raisins
3 cups quick cooking oats
Instructions:
Preheat oven to 325F.
Cream the brown and white sugar, and butter, until smooth and light in color. Add eggs, one at a time, beating until combined, then add vanilla and stir.
Combine the flour, salt and baking soda. Add to butter-sugar mixture and stir until just blended.
Mix in the remaining ingredients.
Drop by heaping spoonfuls onto ungreased baking sheets. You should get approximately 3 1/2 dozen cookies.
Bake for 10-12 minutes in the preheated oven. Remove from oven and allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
