My son came home from school at the end of the year last year and so nicely informed me that he had signed me up to bring a cake to his end-of-the-school-year party.
Well, thanks, buddy. I hardly ever make cakes so I’m not quite sure what made him do that but, he did. So, there I was trying to figure out what I was going to make. I even considered going to the store and just buying a cake. Who would know the difference? Everyone would probably. The kids wouldn’t care, but I would feel like a lazy mom and I didn’t want to end the year on that note.
While doing some aimless browsing online, I found a recipe for banana cream pie poke cake on Facebook. Now we’re talking! This sounded delicious, and it had that homemade appeal I was looking for. It was settled. That’s what I was going to make. Even though the instructions seemed a bit lengthy at first, it wasn’t all that hard to make this up.
When it was baking… oh the smell was wonderful. I was worried that it wasn’t going to make it to the school. It did though. The kids, teachers, and parents that were there all really enjoyed it. I had to sneak a little piece right before it was almost gone. Good thing I did, or I wouldn’t have even gotten to taste it.

Quick Tip: Spritz any bananas on the top with lemon juice to keep them from turning brown too quickly.
