Lazy Daisy Lemon Cake

I was hosting a card party at my house for all the ladies that like to get their scrapbooking gear out and make homemade birthday, thank you, and get well cards.

It’s always so much more fun when you can do it with other people rather than sitting and doing it alone. It was going to take place in the afternoon, before dinner but after lunch time. I wanted to serve a dessert that was tasty, but light enough it was going to leave everyone feeling like they had stuffed themselves full of sugar before going home to feed their families.

Lemon is one of my favorite flavors of all time. It’s also one of those ingredients that you can use to add sweetness without overdoing it. I found a recipe for a light lemon cake and thought I would give it a whirl.

I made it the morning of the event, and it came together beautifully. The smell filled the whole house and lingered around until people started showing up. Everyone asked me what I made when they walked in because the aroma was so good. I showed them the lemon cake, and people started licking their lips instantly. I couldn’t get it served out fast enough!

Quick Tip: Leave out the brandy or rum and use an extra tablespoon of lemon juice.
