Mexican Flavors Make This Meatloaf One-Of-A-Kind!

No matter what I did to my meatloaf, my kids would not eat it. They would kick and scream and act like I was feeding them poison or something I swear. It was good I thought. It was the same recipe that my mom always used when I was growing up. Just regular ground beef with some oatmeal, an egg, a little milk, and some ketchup on top. If nothing else,  it was simple to make and super affordable. That’s probably why my mom used that recipe come to think of it. My husband didn’t seem to mind it either.

I reached a point though where I was just tired of fighting with them over the meatloaf. I didn’t want to take it completely off the menu though. It was one of our regular dishes, and like I said, the hubby and I really liked it. So, when I found this recipe on My Recipes, I was hoping that it would work.

Much to my surprise and delight, the kids actually liked this one! Now we can have meatloaf again with a calm and relaxing atmosphere at the table. Finally!
