Chicken In The Crock Pot: For Easy Weekday Meals

I have always been told that crock pot meals are for the winter time. That’s where you cook your soups, stews, chili, and other classic cold weather meals. When our air conditioner went out last year, I discovered that the slow cooker is for more than just that. What happens when you turn on your oven in the summer? It makes the house even hotter than it already is. What happens to the temp when you plug in your slow cooker? Nothing! Ta-da! Why not use the crock pot in the summer?

After that day when we were dying of heat stroke, I decided that I would be using the slow cooker method a lot more during the warmer months from there on out. Not only did it keep the house cooler, it kept the air conditioner from running, after it got fixed.

One of my favorite meals to make is this super simple chicken dish that I found on Group Recipes. It’s done in just a few hours, so I usually toss it in after lunch and then I’m done cooking for the day. Perfection!
