Whenever my kids come to visit for the weekend, I know that I am going to have quite the crowd to feed. We have tried the whole go out to eat thing, but by golly, with all the grand kids running around, it can be more stress and pressure than what it’s worth. That’s why, until they get older, I think we will just eat at my house. I don’t mind cooking for everyone, especially when we have recipes like this make ahead breakfast casserole from Recipe Lion that can be used.
All the kids and grand kids really enjoy this, and I don’t mind making it. I can make it at night and stick it in the fridge so that in the morning it’s ready to go. If both of my kids are home with all five grandchildren, I usually make two of these. One I make as is, and the other I do a little less sophisticated for the little ones.
We hardly ever have any of this leftover, but if we do, my son and son-in-law usually clean it up by lunch time for a snack. I make this for potlucks and family events once in a while too and it’s always a really big hit.
