Easy German Potato Pancakes

I still remember the first day my mom made us potato pancakes… somewhere around 20 years ago or so. She asked if we wanted pancakes for breakfast, so of course we said yes. I was expecting the cake-like pancakes that you’re thinking of. Nope. Wrong. I snuck into the kitchen while she was cooking, and I saw her frying up what looked like hashbrowns. I said, “I thought you were making pancakes, Mom.” “I am, and these are, now scoot!” Oh boy, was I ever confused. I didn’t know what to expect.

When she put German potato pancakes on my plate, just like these ones from All Recipes, I think I just sat and starred at them for a few minutes. She said, “Well aren’t you going to try them?” I wasn’t even sure what to do with them. But, eventually, I did try them, and then I couldn’t stop eating them!

She actually went back to the kitchen to whip up another batch. She admitted that she was trying to trick us into eating them without ever saying anything, but it didn’t work. We asked for these at least once a week after that day, and I still eat them about that often now.
