It wasn’t long ago, that my husband and I were sitting side by side in the doctor’s office, and he was telling us that we needed to make some lifestyle changes. All of that fried food and dinning out had finally caught up with us. Now, it wasn’t to the point where the damage was irreversible, but it was where it was time to take notice and take better care of ourselves.
We agreed that we should start dieting and exercising. Thankfully, we were going to be able to do it together. That was going to make things a lot simpler. So, we went home and came up with an exercise routine, mostly walking.
Then, I started working on our menu. I found this recipe on Group Recipes for a healthy Tuscan chicken pasta dish, and it sounded so good, it was the first one we tried.
We were both so pleased with this dish. I was glad it was the first one we made, because it gave us the initiative we needed to keep going… and we still are today!
