When my husband and I first started out with a new family, we were struggling, to put it lightly. Paycheck to paycheck living was normal for those first few years. It was hard, but we were happy. As the person in charge of the food budget, it was my job to find meals that would fill us up and not cost an arm and a leg. One of the recipes that I came up with was chicken parmesan.
The dish I made was a lot like this recipe from Group Recipes. It made a huge pan full, and it was super cheap to buy all the ingredients.
When it was just the two of us, we always had plenty of leftovers so we could eat it a few days in a row. It still tasted good by the second and third days so we didn’t mind at all.
Now that we aren’t struggling so much, we still make this meal. Not because it’s affordable, because it tastes so good!
