My Father Loved This Pot Pie So Much He Ate The Leftovers Cold, Straight From The Fridge… And Now I Do The Same
We didn’t have pot pies very often when I was a kid. I’m not sure why – I think it’s definitely a country style meal, and we were very much a countryside family. But I guess we just liked casseroles so much, or maybe it was because casseroles were faster to make. Sometimes my Mom really needed to whip something up quickly! But occasionally she made a pot pie – and we gobbled it up in a heartbeat.
When I moved away from home and got a family of my own, I soon realized pot pies take a little more work than your regular casseroles or crock pot meals… However, I still like them so much that I make one at least once a week. Sometimes I chop the veggies and prepare the filling the night before.
I’ve tried countless recipes and I’ve really enjoyed most of them. But the recipe I’m about to share now is, hands down, the best one so far!
