Maybe it’s because spring is getting closer that I have started dreaming of going camping again. I haven’t done that in years – I mean, I love being in the nature but it’s been a while since I’ve stayed outside overnight. One of the things that always makes me a little hesitant is food. I don’t want to eat cold beans straight out of the can! And I can’t bring my whole kitchen with me, can I?

I do realize people go camping all the time, and they make pretty amazing meals, too. So I started searching for dishes that were easy to make at home AND outside. I’m a big fan of cast iron skillets because they can be used pretty much anywhere!

But don’t worry if you don’t have one. If you’re making this casserole in the comfort of your home, you’ll do fine with just a simple baking dish!
