An Olive Oil Cake That Delights Your Senses

One afternoon, I was thinking of a simple cake that I would love to eat with my cup of tea. It’s funny how I think of such a problem sometimes. But then again, who wouldn’t want to enjoy an afternoon cup of tea, right? The perfect company for such a moment is freshly brewed tea or coffee, and a pastry or a piece of cake that you can pair it with. I wasn’t in the mood for something extremely sweet though, so I was thinking of baking a simple pound cake or a simple bread.

While I was searching for recipes, I accidentally clicked an ad and it started to play. It’s a video about a celebrity in her home. I came to close the video when something caught my ears- olive oil cake.

The celebrity was about to make an olive oil cake from scratch. The video has a lot of shortcuts, but the olive oil cake was able to get my attention the moment it was mentioned. I knew I had to make it for myself and my family.

I remember that Mom has her own olive oil cake recipe, but I found another recipe that was far easier to make than her version. It’s an olive oil cake recipe from Dessert First Girl. I stuck to it and my husband loved it!

The cake was moist and oh so soft that you wouldn’t have a problem slicing it. It will not get crumbly like some cake and instead will cut smoothly. A word of warning though- this cake is addicting!

Quick Tip: Using extra virgin or a more robustly flavored olive oil will give you a moist cake with a dense, tender crumb.
