Uncle Oliver’s Spicy Garlic Chicken Potatoes

I have only met Uncle Oliver five times in my married years with my husband. He lives in another country and just comes for a visit at least once a year. Uncle Oliver is my husband’s favorite uncle; they really got along well when he was a kid. I asked him if it’s because Uncle Oliver used to spoil him. He just looked at me and said: “you forgot who’s my mother. No one can spoil my mother’s children.” I can only agree. My mother-in-law’s so cool.

Uncle Oliver is a really jolly man with the Texan swag and twang. Even though we don’t usually see him, I feel comfortable around him. He’s a really friendly and accommodating guy.

A few weeks ago, Uncle Oliver emailed everyone and announced that he would be visiting. He would stay for a month at my parents-in-law’s house, and would visit every family. We were on the list and my husband was ecstatic.

When Uncle Oliver arrived, my kids immediately felt comfortable with him. They spent the whole morning playing with him. By the time the afternoon came, he volunteered to cook dinner for us; I just can’t say No.

Dinner was composed of these really juicy spicy garlic chicken and potatoes and soup for the kids. His chicken recipe tasted so good I had to ask him for the recipe. He gave it to me since his favorite nephew (my husband) seemed to love it!
