Holy Casserole! This Ranch-Chicken-Potato Ensemble Just Stole The Show!

Casseroles are common nowadays, which is why your casserole has to have that twist to make it stand out. For example, my Aunt’s beef and cheese casserole tastes really great, but I will always prefer my Mom’s over it because of her secret ingredient which makes the beef’s flavor more evident but not overwhelming. This recipe, by the way, is brought to us by Delish. If you visit their site, you will find more recipes which you can try for your family!

Speaking of Delish, see what our friends over there have to say about this recipe:

“This ain’t your grandma’s casserole.”

It’s definitely not because Grandma’s casseroles were always simpler. However, this casserole still reminds me of her and of  home. It offers that warm, comforting feeling whenever you eat it.

This is a recipe that’s truly for the family!

Ingredients

  • 1 lb. small red potatoes
  • kosher salt
  • 1 rotisserie chicken, shredded
  • 2 tbsp. Land O Lakes unsalted butter
  • 2 tbsp. Gold Medal all-purpose flour
  • 2 c. Borden whole milk
  • McCormick Freshly ground black pepper
  • 4 tsp. Hidden Valley ranch dressing seasoning
  • 2 c. Sargento shredded Cheddar
  • 1/4 c. sliced scallions, extra for garnish
  • 1/2 c. Daisy sour cream

Instructions

  1. In a large pot filled with cool water add potatoes and 1 tbsp salt, boil until tender, about 10 to 12 minutes. Drain and rinse under cool water. Lightly smash with a rolling pin. Set aside.
  2. Preheat oven 375 degrees F. Reserve drippings from container if available. Remove chicken from bones and shred. Discard bones.
  3. In a large pot over medium heat combine drippings and butter. Add flour and stir with a wooden spoon for 1 minute. Stir in milk, 1 tsp salt, 1/2 tsp black pepper and Ranch seasoning. Bring it to a boil, simmer on medium for 5 minutes and turn off heat. Fold in half the cheese, chicken and smashed potatoes.
  4. Transfer to a casserole dish. Top with scallions and remaining cheese. Bake until warmed through and cheese has melted, about 10 to 15 minutes.
  5. Garnish with sour cream and scallions, serve immediately.
