I was visiting my parents when Mom received the call that Aunt Beth and her family would be arriving at lunch. It was 10 in the morning and that meant they would be arriving in one to two hours. I panicked alongside with her as we thought about what to prepare. Take out was out of the question because that family never liked take outs. Mom has a bit of an advantage over me though.
When I panic, it’s usually because I don’t have anything edible in the pantry to even make into an edible dish. Whenever Mom panics, it’s because she just doesn’t know what to cook. But for Aunt Beth and her family, we decided to go with baked chicken.
That family loved cheese and would never ever say no to any dish that involved chicken. The recipe was a hit. The moment it was served in front of the hungry travellers, they dug in and finished the whole casserole in no time.
I couldn’t say I was surprised because Mom’s parmesan baked chicken should be in the Guiness Book Of World Records for the tastiest baked chicken recipe. Nothing is truly better than a homecooked meal.
