The Roasted Potato Salad That Changed The Salad Game!

This roasted potato salad changed the salad game for me and my husband. The two of us love salad, most especially those that involve creamy dressings. One of our favorites is potato salad. It’s something that we both grew up eating. Our mothers love serving them during every occasion as a side dish to any type of meat. It’s the reason why we both grew up loving it. My husband even has his own version of potato salad and it’s yummier than the version of my mother-in-law, but don’t tell her that please. I want to always stay on her good side. So anyway, I always make it every time we crave for it, and it does not matter what day it is. As long as we both want it, one of us will make it.

This potato salad recipe that I am about to share with you is a bit different though. It was suggested to us by a friend because she knew how much we love potato salad. True, it’s pretty much similar to the usual potato salad except for one method: roasting. Yes! The potatoes in this recipe are roasted to perfection before being added to the rest of the ingredients. The process of roasting added that certain flavor that just made potato salad more sinful than it already is. We both love the taste of roasted potatoes and it’s something that we took note the first time we made it. You will definitely love this too! It’s a really nice twist to the recipe!
