Aunt Suzy Does It Again With Her Caramel Surprise Cookies!

Well, since I am always making cookies for my family, I do not want them to get bored about my food, so instead, I learn to switch it up.  I try pure chocolate cookies, chocolate chip, oatmeal raisin, cranberry apple, etc.  There are just so many good options, but this one? This is the best.  This cookie has the appearance of a chocolate cookie, but everyone will be so thrilled to discover they are actually full of caramel that oozes out once you take a bite out of it.  Yum!

Ingredients

1 box of Betty Crocker Devil’s Food Cake Mix

1/4 cup of water

3 tablespoon Wesson vegetable or canola oil

1 egg

1 bag of Rollo Candies

Chopped Walnuts or Pecans (optional)

 

 

Instructions

Preheat oven to 350 degrees.

Unwrap Rollo Candies and place in a small bowl

 

Mix together cake mix, water, oil, and egg until a fudge like batter forms.

 

Take a teaspoon of dough using cookie scoop. Flaten out. Place one Rollo candy into the center and fold edges over. Roll softly into a ball (and then roll into nuts if desired) and place on to Nordic Ware Baking Sheets lined with Silicone Baking Mats. Each cookie sheet should have approximately 12 cookies.

Bake for 8 minutes. Do not overbake.

 

Cool cookies on a wire rack and enjoy.
