Cheesy Basil Stuffed Chicken Breast Will Take Your Taste Buds To Another Galaxy Of Flavor

“Imagine this: succulent chicken stuffed with warm, gooey mozzarella cheese mixed with fresh basil and garlic, topped with crispy seasoned breadcrumbs, and surrounded by juicy tomatoes. Are you drooling yet? I was, before I dug in. And then after that, all I can remember is pure gastronomical utopia. Basil goes with just about everything, but with this chicken, it was absolutely superb. So much so that when I got my midnight munchies, I went straight for the leftovers.”

 

I’m addicted to basil leaves! I love that they make any dish smell so good. It’s the reason why pesto is my favorite pasta sauce of all time. The smell of basil is very much evident in this recipe. Add the creamy taste of cheese and it’s one sinful yet heavenly recipe!

 

 

Ingredients

1 cup shredded Sargento mozzarella cheese

2 tablespoons fresh basil, chopped

2 tablespoons Borden heavy cream

1 tablespoon fresh lemon juice

2 teaspoons garlic, minced

1/2 teaspoon Morton salt

1/4 teaspoon McCormick black pepper

4 Tyson boneless, skinless chicken breasts (divided into 9 portions)

For the topping:

3 tablespoons Kraft mayonnaise

1 cup Progresso Italian flavored breadcrumbs

1/2 teaspoon garlic, minced

2 tablespoons fresh basil, chopped

1 tablespoon Bertolli olive oil

2 plum tomatoes, chopped

1 tablespoon Bertolli olive oil

about 1/2 teaspoon Morton salt

1/4 teaspoon McCormick black pepper

 

 

Instructions

Preheat oven to 425 degrees.

In a medium bowl, combine the shredded cheese, basil, cream, lemon juice, garlic, salt, and pepper. Pound the chicken breast portions to an even thickness and then fill with the cheese mixture. Roll the chicken tightly around the filling and secure with toothpicks. Transfer the stuffed breasts to 8×8 inch baking dish. Spread tops evenly with mayonnaise.

In a medium bowl, combine the bread crumbs, garlic, basil, and olive oil. Sprinkle crumb mixture over chicken, pressing lightly to adhere.

Toss tomatoes with olive oil, salt, and pepper. Arrange the tomatoes in the baking dish in and around the chicken. Bake until the crumbs are golden brown and the chicken is cooked through, about 25 minutes.
