When I served these to my friends, I think I forgot to orient them that these are not nuts but chicken. They devoured it like peanuts! I just went to get a pitcher of ice cold lemonade from the kitchen and when I got back—voila! The serving plate, the huge serving plate, was empty. It wasn’t even five minutes after I set it down. My friends are hungry lions.

It’s something that I’ve been looking for recently—food that is healthy, but still tastes so good. We’re not that young anymore to just allow our bodies to consume too much fat or preservatives. We need to take care of our health so we can stay alive longer to enjoy more food!
Ingredients
2 large egg whites (Eggland’s)
2 tablespoons Heinz Dijon mustard
1⁄2 teaspoon Morton salt
2 cups panko breadcrumbs
1 1⁄2 lbs Tyson boneless skinless chicken breasts, cut into 1-inch cubes
Instructions:
Preheat oven to 450 degrees. Coat a large baking sheet with olive oil cooking spray.
In a medium bowl, whisk together the egg whites, mustard, and salt.
In a shallow bowl or pie plate, spread out the panko.
Add the chicken pieces to the egg mixture and toss to coat. Transfer the chicken to the panko bread crumbs, toss to coat.
Transfer the breaded chicken to the baking sheet.
Bake 15 minutes, then use a spatula or tongs to flip the chicken pieces.
Continue baking 5 to 10 minutes or until golden brown.

Quick Tip: You can use regular bread crumbs instead of panko.
