If you’re making this for just two people, you could prepare the ingredients and then freeze half a batch to bake later, and just bake the other half right away.
Although I have to say this is so delicious I could easily enjoy this for dinner! Just this dip, with some nice, crusty bread and crackers. You could also make this a little bit lighter by choosing low-fat ingredients (sour cream, cream cheese and mayo). But I guarantee this is totally worth a few extra calories!
Ingredients
2 cups parmesan cheese
1 (10 oz) box frozen chopped spinach, thawed
1 (14 oz) can artichoke hearts, drained and chopped
2⁄3 cup Daisy sour cream
1 cup Philadelphia cream cheese
1⁄3 cup Hellman’s mayo
2 teaspoons garlic, minced
Instructions:
Preheat oven to 375°F.
Combine the parmesan, spinach, and artichoke hearts. Add the remaining ingredients and mix until well combined. Sprinkle with extra cheese, if you’d like.
Bake for 20-30 minutes. Sprinkle with paprika and chopped, fresh herbs before serving.
