Ranch Dressing Ain’t Just For Salads Anymore

Enjoy this pasta salad on a large scale at a party or with family, or just make a single serving portion for yourself. It is really that easy to put together and delicious and totally filling. I have tried adding chunks of cubed ham into this as well and it really is a nice addition that helps fill you up. Kids tend to like this, too! I was surprised when I noticed it, but then I realized it was just that good!

I totally agree! This is a great dish to make on the side of a delicious burger or as a side for your weekday meals. It is refreshing and totally delicious!

 

 

Ingredients

1 cup fat free Greek yogurt

1/4 cup reduced fat Miracle Whip

1 packet (+ additional depending on your taste) Hidden Valley ranch dressing mix

1 lb whole grain pasta, cooked

2 large carrots

1 1/2 cups broccoli

1 cup ham

1 cup Kraft cheese (choose a low fat option)

1/2 yellow bell pepper

1/2 red bell pepper

 

 

Instructions

Combine the Greek yogurt, miracle whip and ranch dressing mix. Set aside.

Cook the pasta until al dente. Drain and rinse with cold water, drizzle with a bit of canola oil so it doesn’t stick.

Chop the veggies, ham and cheese into bite sized pieces. Combine with the pasta and 3/4 of the dressing mix. Stir well, add additional dressing if it is too dry.

Refrigerate for at least an hour before serving.
