I am a meatloaf fan. Oh yes, pretty much any meatloaf recipe will do the trick. I have never tried one I didn’t like, so far. But I’ve been trying to find a way to make it a bit more interesting. I’m not exactly sure why I feel the need to do so… Maybe it’s because the appearance doesn’t exactly show how delicious a dish meatloaf actually is.

Not only are these mini meatloaves absolutely adorable, they are also very easy to make. And they only need about 20 minutes in the oven!

Make these ahead and it’ll be so easy to freeze individual portions for a quick lunch when you need one. Also, when you’re making mini meatloaves you can divide the meat mixture and use different seasonings – make half of them spicy hot and the other half milder for kids!
