I am head over heels for this yummy casserole, you guys. It is so easy to throw together. And guess what? Not only is this a super easy casserole but it is also made in the Crock Pot! So, you get a double whammy of ease. If you’re a busy mom, like myself, or a frazzled father looking to prepare dinner for his family, this casserole is your lifeline. Feel good about feeding your kids ham and potatoes for dinner just like your mother or grandmother used to do. My family really likes this meal served with steamed veggies and hot cross buns. However, feel free to serve it with anything you desire. Some other ideas would be applesauce, freshly baked bread, and peas and carrots.
If you make a double batch of this yummy goodness you can freeze the half of the casserole for another night! All you have to do is take it out of the freezer and place into your slow cooker, no thawing necessary!
