Twice a year, my co-workers and I arrange a potluck for anyone willing to show up with a dish. With more people attending every time, I was struggling to find a recipe that would stand out amidst so many offerings. It’s not that I’m competing with anyone, but I have to admit there is a little pressure when you see what everyone else has brought with them!
My mother recommended this simple coffee cake. After looking at the list of ingredients, I felt confident enough to give it a try and I was not disappointed. Instead of taking home leftovers, I was left with a plate full of crumbs! I’ve made this a couple of times since then, just for friends and family. It has been a great hit and so many people have asked me for the recipe.
