The amount of chili sauce and red peppers may seem too much but trust me; I believe it’s what made this dish extra special! Of course, you could always adjust the amount if you’d prefer a milder flavor or if you have small children. For us, it was perfect and I heard no complaints whatsoever!
You could also substitute ground turkey for the beef – a friend of mine tried it and she said it was the most delicious meal she’d ever had! Serve this with fresh, crusty bread (homemade, if you have the time to bake some) and your family will give you rave reviews!
Ingredients
1 pound ground beef
8 cups water
4 cups tomato juice
3 medium sweet red pepper, diced
1-1/2 cups chili sauce
1 cup uncooked long grain rice
2 celery ribs, diced
1 large onion, diced
2 teaspoons browning sauce, optional
3 teaspoons chicken bouillon granules
2 garlic cloves, minced
1/2 teaspoon salt
Instructions:
- In a Dutch oven (medium heat) cook beef until no longer pink, then drain. Add all the remaining ingredients; bring to a boil.
- Reduce heat; let simmer uncovered, for 1 hour or until rice is tender.

Quick Tip: Substituting chicken or beef broth for the water makes for even more flavor!
