This recipe calls for dates and walnuts for added flavor but feel free to increase the cranberries, if desired, and it tastes just as delicious! Bake in a 9-inch round pan or 9-inch square, whichever is on hand.
In addition to cranberries, I’ve also tossed in a few handfuls of nuts. I love nuts and so does my family. It gives the cranberry coffee cake an extra texture to swirl around in your mouth. Yum! I often double the ingredients to make two of these cakes instead of one. I freeze the other one so that I’ll have a wonderful treat for surprise guests – or myself, whenever I need something delicious!
