For a cold winter night or weeknight dinner, this rich and earthy slow cooker soup will warm your soul. Perfect around the holidays when ham is in abundance, this soup is an easy solution for your leftover meat. With salty ham and sweet carrots, the flavors will tantalize your tongue. Easily prep this dish in your slow cooker in the morning, set it to low, and 8 hours later the aroma of a home cooked meal will be waiting for you.
Let’s hear it from our friends over at MyRecipes:
Potatoes contribute starchiness and silky thickness, while sweet carrots and salty ham balance out the peas’ light, earthy flavor. Leftovers fare well in the freezer, so say hello to your new favorite make-ahead soup. Garnish with parsley and additional pepper, if desired.

I’ve made this soup for 45 years! I just don’t put potatoes in (watching the diet). I’ve also found that there is less and less meat on the hocks, for some reason. I still make the soup with them (for the smokey flavor) and pick off the meat, but at the very end I cube a ham steak and add that. When I make it for myself (not the whole family), I don’t use any meat-just vegetarian style!
