This Southwest Dinner Was Cooked in a Crock Pot? You Won’t Believe It!

This chicken recipe uses prepared, canned ingredients so it’s super easy to throw together. I love making things from scratch but sometimes prepared ingredients simply are a lifesaver! Everyone here loved it, and I’m pretty sure after making it once I can remember how to do it with a few tweaks.

Of course, following the recipe as is made the most tender, juicy chicken with the perfect combo of flavors including corn, salsa and black beans. The best part is that this is a fix it and forget it, true crock pot meal.

It has only the four ingredients and the longest part of the process will be opening the cans. Every bit of the flavor is packed into the salsa. I used Old El Paso as it’s my favorite, but you can use any brand you wish!
