While it’s not summer anymore, for many of us, the days are still very hot and humid. If you happen to live in a place where it’s sunny and warm year round, you have probably eaten enough ice cream and are bored of it (can this actually happen?) so why not liven up your taste buds by making a cool coconut key lime sheet cake! This cake tastes so good, I am not even joking. it reminds me of something I would be noshing on if I were in the Florida Keys. And guess what? You do not have to fork over thousands of dollars on a vacation to this tropical destination in order to get this cake. It is very easy to make in the comforts of your own kitchen.
I love allowing this cake to chill in the refrigerator for a few hours before digging into it. There is just something about an icy, cool key lime and coconut cake that makes my tongue want to do a happy dance. It is seriously refreshing!
