When my parents came up for a visit from Florida recently, we wanted to do whatever we could to make them feel welcome.
We also wanted to ensure that they had a great time. My brother and sister live in my area, along with a lot of cousins, so I figured seeings as it was nice out, we would have a barbecue and invite everyone over for a nice meal. There was plenty of food to go around because everyone brought a meat and a dish to pass. It was a great turnout, and my parents looked so happy.
My favorite side dish was this crisp and refreshing coleslaw that one of my cousins made. I know that it was a crowd favorite because when I went to get a second helping, it was gone.
I had her write down the recipe before she left, and I’ve used it for a few different potlucks and even as a side dish at home since then. She was right, it is really easy to make. People love the stuff too. I hardly ever have leftovers to enjoy.
