Rigatoni Pasta Salad Is Picnic Perfect!

The kids were wrapping up all of their sports for the end of the school year, and I hate to admit it, but I was actually pretty pumped about it.

I had trouble keeping up with all the events along with work, school, and taking care of the house. It’s always such a busy time when they are playing their spring sports. It feels like I am running in circles for months. So, when the invitation came home from the school for the end of the year banquet, I had to find a super recipe to take with me.

I knew I wanted to do a cold salad, but I was tired of the coleslaws, potato salads, and macaroni salads. That’s when I decided I was going to search around for something else. It looked like it was going to be a new favorite.

There were just enough ingredients to make it seem fancy, but it wasn’t going to be overly difficult to prepare, and double because I needed a lot! It was a huge hit at the banquet, and my kids came home with tons of rewards so that was nice. Until next year!
