Green Onion Potato Salad – Does Wonders For Your Hungry Tummy

Every Spring, our church holds a big family potluck BBQ for all the members.

It’s a great way to enjoy our outdoor recreation area and spend some time socializing. We get to talk about all of our plans for the upcoming season and go over any fundraisers or other programs that we plan on having. It’s relaxing for the adults, fun for the kids, and a great way to get to know any new members. The best part is we get an amazing meal. We have some pretty incredible cooks in our church I’ll have to say.

Last year I signed up to bring a potato salad. I was just going to make my traditional recipe until I heard through the grapevine that there were a couple of people that were allergic to eggs. I thought to myself, would it be possible to make a potato salad without eggs?Not only is it possible, it looked very simple and darn tasty too. This turned out incredible, and the people with the egg allergies couldn’t stop thanking me for think of them. It was nice to know they enjoyed it!
