When I was going out on my first date, several several years ago, the guy that was taking me decided that we would go to a little Italian restaurant that we had in town. It was small, quiet, and pretty romantic actually. I loved Italian food, so he had one good thing going for him as soon as we started the date. He was actually pretty handsome too, so I guess he had two things going for him. When we sat down to order, I wanted to sound kind of sophisticated, so I ordered their penne pasta with sun-dried tomato pesto. Sounds fancy, right?
It was more than just fancy sounding. The flavor of it was so good, I couldn’t stop eating it. I was worried my date was going to think that I was a pig, but he was pretty busy gobbling down his own food. I guess we had something in common. Many years later, I married that date, and now we have been together for over 20 years!
For our anniversary one year, I decided to recreate that first date so I made this recipe from Cravings of a Lunatic that was very similar to that one from so many years ago. The husband loved it! I enjoyed making it, and the taste was great.
