Ever since I was little, I have loved cheesecake. Something about the mushy creaminess followed by the perfect crunch in the crust was just amazing for me. I loved every little bite and even more so when topped with a great fruit or berries. Sometimes my mom would make it extra special by adding a drizzle of chocolate syrup over it, too. Anything she did that made it better was definitely a welcome addition.
Sometimes even a dusting of powdered sugar felt special. Now, my mom loved to make me cheesecake, but she did not love the mess I used to make with it. She always tells me that the gooeyness was appealing to me, so I would take the cheesecake between by hands and squeeze it.
She says I made a mess all over my high chair tray and clothes and even got in my hair. So she knew she had to come up with a solution. She tried many different things until she finally found the perfect match: cheesecake cups. She would make them individually sized in a muffin tin with a topping of strawberry and all and they were the perfect solution to my messes. She would cut them up for me and I would eat them neatly.
