Every year during the holidays we always have an obligatory dish of scalloped potatoes. This year, I decided to switch things up a bit and make scalloped corn casserole. I was worried at first that my family would be disappointed that their spuds were missing but honestly, they weren’t! I think that scalloped corn casserole is here to stay! Well, at least in my household, how about yours?
