My husband and kiddos really like this delicious pizza sandwich casserole recipe. My husband is a mega fan of eating pizza and so are my little cherubs so I’d say this recipe is staying in the meal plan rotation. I like this casserole, too but I mainly eat the toppings because of the new diet I am on. I like to keep on eye on how many carbs I’m consuming in one day. Anyway, this stuff is GOOD!
Check out what Amanda’s Cookin’ had to say about this recipe:
While this recipe is best prepared the night before, it can also be thrown together in minutes for a quick weeknight meal. It’s also great when you realize you were supposed to be bringing something to that get-together today! No one turns up their noses at these Pizza Sandwiches, but you can easily swap out the pepperoni for any other meat (or even some sauteed vegetables).
I love it when I can prepare a recipe the night before. It really frees up a lot of time for the next day.
Ingredients
1 package dinner rolls
2 cups Kraft mozzarella cheese
Small package pepperoni slices
1/4 cup Hunt’s tomato sauce
1/4 cup Kerrygold butter, melted
2 teaspoons oregano
Instructions:
Melt the butter in a saucepan over medium heat. Once melted, remove from heat to prevent scorching.
Slice the buns across the middle and set the tops to the side.
Spread the tomato sauce over the bottom sections of the buns and place into a 13×9 baking dish.
Spread 1 cup of mozzarella cheese over the top of the sauce.
Layer the pepperoni slices to make one full layer over the top of the cheese.
Sprinkle with remaining 1 cup mozzarella cheese.
Place tops of rolls back on and drizzle with melted butter.
Sprinkle on oregano and cover with aluminum foil.
At this point, if preparing the night before, refrigerate until ready to cook.
Once ready to cook, preheat oven to 350 F.
Bake sandwiches for 20 minutes until cheese is melted and butter has been fully absorbed, resulting in golden sandwich tops.
Cut into portions and serve.
