It’s funny how you could enjoy the most refined, complex dish in a wonderful Michelin star restaurant and still crave for something as homey as mashed potatoes. This age-old side dish will probably never go out of style, and in my opinion it is perfect for any occasion. Of course, it depends on the main course whether you’d like to serve it with your “weeknight mashed potatoes” or something a little more fancy.

I thought I’d present one of my favorite, amped up, mashed potato dishes. This recipe is something I like to make whenever I feel like really pampering my family, and it makes the perfect side to your dinners, no matter what the main course is. However, you could even serve this for a weeknight meal on its own!

These taters are a huge hit at our house and usually I don’t dare even dream of having leftovers. But if I do, I certainly always make sure to hide them in the back of the fridge, so that I can have them for lunch myself the next day… I know, I’m such an evil Mom haha!
