Everyone loves a good ‘ol cracker dip.
With the holidays just around the corner, I am already planning my Thanksgiving and Christmas feasts. I have all of the traditional foods on the menu as far as sides and entrees go, but I lack appetizers. In my family, you have to have appetizers sitting out or everyone will be picking at the main dishes before they are done cooking. I hate that! So, I make sure to have at least a relish tray and some cheese and crackers resting on all the nearby tables. This year, I am going to make this lovely pimento spread/dip. You can use this spread in many different ways. shoot, I bet you could even make a sandwich out of it!
I like this pimento cheese spread recipe because it is versatile, tasty, and is very easy to make. Plus, I can make it the night before the big dinner because it needs to chill in the fridge, anyway. Such a time saver!

Quick Tip: The cheeses should be very cold when you mix them in, for best results.
