Luscious Lemon-Meringue Pie Will Make You Say, “Oh, My!”

My love-hate relationship with lemon started when I first took a bite of a homemade lemon pie.

That first bite full of creamy goodness but with a hint of something fresh inside—I was done. I felt like I was I had always thought that lemons are only for drinking. Remember those unbearable summer days when the sun is glaring hard right at you? The only remedy is a glass of ice cold lemonade and you would instantly feel refreshed. Lemonade was the most effective and delicious thirst quencher for me; and that alone was enough to make me love it. And then I discovered that it could also be the best thing that ever happened to desserts. I didn’t exactly know how to feel about that.

I am cutting down on sugar because my parents are both diabetics. So even if I don’t have it (and I hope I won’t), I have to start controlling the sugar that enters my body. But there are just certain types of food that you can’t ever deny of eating—they’re temptation personified in a plate! Pesto for one.

I can’t deny a plate of pesto pasta. Ever. Coffee is another one. I am literally a coffeeholic and would eat or drink anything with coffee on it. Then there’s lemon. Who would have thought that something as tangy as lemon can make such a simple dessert taste so good?

Quick Tip:  if you like your pies on the tart side, add lemon zest.
