These cookies are so soft and chewy, perfect for dunking in a big glass of milk. The kids loved these as much as I did! I think I’d better make a double batch next time…
I’m thinking of making these over the holidays but instead of regular chocolate chips, I’d like to use white chocolate chips. I think I’ll cut down the sugar a little bit since I think white chocolate makes these a little sweeter. These would also made lovely holiday greetings for friends and neighbors!
Ingredients
1/4 cup extra light olive oil
1/4 cup Land O’ Lakes butter, melted
1/2 cup Domino brown sugar, packed
1/4 cup Domino sugar
1 Tbsp pure vanilla extract
1/2 cup plain Greek yoghurt
1/2 tsp baking soda
1 3/4 cups Gold Medal all-purpose flour
pinch of salt
1/3 – 1 1/2 cup chocolate chips (the more, the sweeter)
1/2 cup pecans, coarsely chopped, optional
Instructions:
Preheat the oven to 375 F.
Combine melted butter, oil and sugar. Mix until thoroughly combined.
Add the yoghurt and vanilla. Stir until smooth.
Add flour, baking soda and pinch of salt. Mix until dough comes together.
Add chocolate chip (and pecans, if using).
Place about 1 1/2 Tbsp scoops of dough on parchment lined cookie sheets.
Press down cookie balls to about 1/2 inch thick (or a bit thinner).
Bake for 8-10 minutes or until lightly golden around the edges.
Let cool on cookie sheets for 3-5 minutes. Remove and cool completely on wire racks.
