Nothing Beats Dad’s Fried Breakfast Potatoes

Whenever Mom would have to stay away for a night for work, or just because she had a trip with friends or something, we always got a little nervous about what Dad was going to do for breakfast.

See, he was never really much of a cook. Mom always took care of what happened in the kitchen, and she was amazing at it. Dad probably figured it wasn’t worth trying to compete with something so good. One day though, all of that changed in an instant.

Mom was going to be gone for several mornings, not on a trip, but because she had to get to the office super early. We had cereal, toaster pastries, frozen waffles, just about anything that didn’t have to be cooked. Then, one morning, I think it was a weekend, we woke up to these amazing potatoes.

They were so much better than that instant food we had been eating for so many days. I couldn’t believe that he had actually pulled it off. The potatoes were super tasty, and Dad was so proud of himself. I was proud of him too. I told him that he could make these for us anytime!
