Lazy Daisy Oatmeal Cake – Easy As A Sunday Morning

This oatmeal cake is surprisingly super easy to make and does not take that much time to make. I like to serve it up after dinner with a nice big cup of hot coffee. The bitter coffee goes perfect with this sweet delectable cake. It’s definitely a cake that you can make a lot of and is perfect to take to a social gathering where you need to feed a lot of people. Or make a big pan of this cake and keep it all to yourself. No judging here!

Ingredients

CAKE:

1 c  Quaker quick oatmeal
1 1/2 c boiling water
1 c granulated sugar
1 c brown sugar
1/2 c oleo (butter or margarine)
2 medium eggs
1 1/2 c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt

FROSTING:

2 Tbsp Land O Lakes soft oleo (butter)
1 c Domino’s brown sugar
1/2 c Tru Moo milk or cream
1 tsp McCormick’s vanilla extract
3/4 c flaked coconut
3/4 c chopped pecans

Instructions

Stir together the boiling water and oatmeal until there are no lumps, and let cool in refrigerator. (you can use leftover oatmeal if desired, use at room temperature).
Combine sugars,oleo and eggs beat well then add the flour, cinnamon, soda and salt. Blend well then add cooled oatmeal and blend well.
Pour into sprayed 9×13-inch cake pan.
Bake in 350^ oven for 40-50 minutes.

Frosting:
In a small saucepan combine butter, sugar and milk, heat to boiling. Remove from heat add vanilla, coconut, and pecans.
Spread on cake while it is still warm.
